Since summer is here and Rootbeer Extract is starting to come on sale I thought I would share a family favorite (Don't tell my husband I'm sharing the family secret or he'll kill me

).
5 - gallons water
5 - pounds sugar
1 - 2 oz bottle Schilling/McCormick root beer extract
7 - pounds dry ice (Broken up)
In a 5 1/2-6 gallon plastic drink cooler/thermos, using a plastic or wooden spoon - mix water, sugar, and root beer extract together until sugar is dissolved. Add dry ice carefully. Make sure it does not come in contact with skin. Root Beer will start to bubble and smoke. Set lid loosely on top of cooler to let some smoke escape. WARNING: sealing the container will cause an explosion and huge mess!!!! Let stand for about 2 hours stirring every 30 min. When smoke dies down it should be ready to drink and enjoy!!!

Note: Do not use metal utensils when using dry ice. Wear gloves when handling the dry ice.
