Since Harmons and Buy Low are having great sales on eggs, I thought I'd be sure to let you all know that you can preserve "fresh" eggs for 9 months. A very inexpensive bottle of mineral oil will go a long way. Simply warm up a quarter cup of mineral oil, rub it all over your newly purchased eggs, and then put the eggs point side down in your styrofoam container. Keep them in a cool dry place and enjoy them for up to 9 months. Don't worry about food poisoning. If they've gone bad when you get ready to use them you will definitely notice it. When I'm getting ready to use them, I always crack them in a separate container before adding them to my flour, et al, just to be sure they are good. I've NEVER had one go bad though.
