This is a Thread to post your crock pot recipes! Please include pictures where possible. icon_cherry


SIMPLE CROCK POT LASAGNA

Ingredients:
About 6 Large Lasagna Noodles (uncooked)
1 lb Ground Beef, browned
1 Large can or bottle of ready made Spaghetti Sauce
1 small container cottage cheese
About 8 oz mozzarella cheese (I use about double this amount, but we love cheese!)
Italian seasoning (to taste!)
1/3 cup water

Spray or coat your crockpot with a non-stick cooking spray or rub gently w/ a light olive oil. This will prevent your food from sticking.

First, brown your ground beef and add the Italian seasoning while cooking. Set aside and let cool.
Layer 2 uncooked lasagna noodles on the bottom of the crock pot, next add about one third of your ground beef, one third of the cottage cheese, 1/3 of spaghetti sauce, and one third of the mozzarella cheese. Keep repeating layers, but make your last layer mozzarella cheese. I usually make three layers. Finally add about 1/3 cup of water to lasagna and cook on low for no more than 4-5 hours.

This recipe is super simple and tastes really yummy! This is a family favorite!

Homemade Cottage Cheese
This is the best and easiest recipe.  Tastes just like the stuff you get in the store for a fraction of the cost.  The best part - it only takes 5 minutes or less to make!

2 cups water
3 Tbsp lemon juice or white vinegar (vinegar is cheaper and stores better,
             either one is fine to use, the taste isn't affected either way)
3/4 cup dry milk powder (non-instant like from LDS cannery)
    OR 1 1/2 cups instant (country pride or stuff from grocery store) 

If using dry milk powder, blend water and dry milk together and heat in a saucepan until it starts to steam, stirring constantly, then remove from heat; or place in microwave and heat until it foams and rises to top of bowl.  If using instant milk, bring water to a boil and remove from heat, then stir in milk with a wire wisk.  DRIP juice/vinegar around the edge of the pan and gently stir, milk will immediately start to curdle, separating into curds and whey.  Let rest 1 minute.  Pour into a colander, rinse with HOT water, then rinse with cold water and break apart into as small of curds as you want.  (do this for about 1 minute until no whey drips.)  Makes about 1 1/2 cups curds.  Add sour cream or yogurt to cream.  Add salt to taste.  Use non-instant dry milk powder for ricotta and instant for table use or when you are in a hurry.

I have never tried it with ricotta, but I don't see why not. Our family likes any and all kinds of cheese and lots of it! My mom makes her own regular style lasagna in a pan and pretty much uses the same recipe as mine, but replaces the cottage cheese with ricotta. She swears it tastes more authentic and rich.

CHICKEN W/ CREAMY GRAVY

Ingredients:
6-8 Boneless Chicken Breasts-thawed
1 family size Cream of Chicken Soup
1 cup sour cream

Coat your crock pot w/ non-stick cooking spray or rub gently w/ olive oil to prevent sticking.

First, add your chicken breasts to your crock pot, next pour the cream of chicken soup over the chicken breasts. Cook on low for about 7 hours. Add the sour cream and cook for 30-45 more minutes. Serve over rice. Super simple, super yummy!

Easy Roast and Red Potatoes

Ingredients:

4-5 pound boneless beef chuck roast (I have these to be more tender)
15-20 red potatoes, quartered w/ skins left on
1 can Beef Consomme' Soup (this can be substituted for 1 package of beef ramen noodles flavoring and 1 cup water)

Again, I always coat my crock pot with a non-stick cooking spray and I sir my roast in the frying pan to add color and lock in the juices. This is optional, on hurried days just throw it in! It will still be fully cooked.

First, add your roast, next add the potatoes, and finally add your soup OR beef packet / water mixture. Cook on low for 8-10 hours. Serves approx. 4-6 people.

BROCCOLI CHEESE SOUP

Ingredients:
2 16 oz pkg. frozen broccoli -chopped-
2 cans Cheddar Cheese Soup (10 3/4 ea.)
2 cans evaporated milk (12 oz ea.)
1/4 cup Dried minced onion (optional)
salt and pepper to taste

Combine all ingredients in your crock pot. Cover and cook on high for 2-3 hours, or low for 4-5 hours.

Serve in bread bowls! This always makes it fun to eat for my kids!

Pork Chops & Mushrooms

Ingredients:
4-6 Boneless Pork Chops
1 Medium Onion Chopped or 1/4 cup dried minced onion (optional)
1 envelope dry onion soup mix
1 can sliced mushrooms
1/2 cup water
1 can cream of mushroom soup

First add meat in crock pot. Next top with onions and mushrooms. In a separate bowl, combine water, soup mix, and condensed soup. Pour over mushrooms and meat. Cover and cook on low for 6-8 hours. I serve this with Rice Pilaf.

I thought this would be a great recipe to use all the veggie and soup good deals we have been picking up lately!

SHEPHERD'S PIE

Ingredients:

1 pound ground Beef, browned
1 can (10 3/4 oz.) tomato soup
1 can (15 oz) whole kernel corn, drained
1 can (15 oz.) green beans, drained
2 cups grated cheddar cheese
2 cups instant mashed potatoes
1/2 tsp. basil

In a bowl, combine ground beef, corn, tomato soup, beans, and basil. Pour mixture in the bottom of you crock pot. Spread mashed potatoes on top. Cover and cook on low heat 5 - 6 hours. The last hour of cooking, sprinkle cheese on the top of potatoes. Serves 4-6.

Butter & Cream Cheese Chicken
This recipe is so yummy, but definitely not for those of you who are watching your wasteline! I am watching mine! I am watching it get bigger and bigger everyday! LOL

Ingredients:

6 boneless / skinless chicken breasts thawed
1 cube Butter
1  8 oz pkg cream cheese
Italian Seasoning Packet (if using just plain Italian seasoning vs. the packet, add salt and pepper)

Coat your crock pot with a non-stick cooking spray.
Add your chicken and 1 cube of butter to your crock pot. Sprinkle with Italian seasoning. Cook on low for 6-8 hours. (the butter will melt in about 30 minutes, and then your chicken will cook all day in yummy butter!)
The last hour of cooking, shred your chicken and stir in your cream cheese. I let my cream cheese sit out on the counter or a little while to soften. It will mix in a lot easier. Serve over rice. Serves 4-6 people.

TACO SOUP 
2 pounds ground beef
2 cups diced onions
2 (15 1/2-ounce) cans pinto beans
1 (15 1/2-ounce) can pink kidney beans
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
1 (14 1/2-ounce) can diced tomatoes
1 (14 1/2-ounce) can tomatoes with chiles
2 (4 1/2-ounce) cans diced green chiles
1 (4.6-ounce) can black olives, drained and sliced, optional
1/2 cup green olives, sliced, optional
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch salad dressing mix
Corn chips, for serving
shredded cheese, Sour cream, quacamole, sliced green onions, and/or jalapenos for garnish


Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.  Will freeze well for up to 3 months.  Serve with cornbread.

ENCHILADA CASSEROLE
10 cut up corn tortillas
1 lb. browned ground beef
1 cup grated cheddar cheese
1 cup grated Monterey Jack cheese
1 can enchilada sauce
1 (8 oz.) can tomato sauce
1 can kidney beans, drained & rinsed, optional

Layer in crockpot.  Cook on low for 4 hours.

This is seriously a fun post!! Love it!

Each time I serve this dish, people ask for the recipe because it is SO GOOD!!

Creamy Chicken Delight

Ingredients:
2 chicken breasts
2 cans cream of chicken soup
1 pkg cream cheese
? cup sour cream
1 cup milk
1 pkt dry Italian dressing mix
Minute rice, as needed

Directions:
1. Heat your crock pot- depending on how quickly you need the dish to be done
2. Cut chicken into small pieces and cook until brown (Or, use the chicken chunks from the Cannery--if you use the canned chicken, you don't need to do this step.)
3. Combine the cream of chicken soup, cream cheese, sour cream, and milk in the crock pot. Stir together until smooth.
4. Add dry seasoning and stir.
5. Add chicken.
6. Cook on low for 4 hours or on high for 2 hours.
7. In the last 30 minutes of the cooking process, cook rice in a separate pot.
8. Once rice is cooked, add the rice to the crock pot mixture and stir well. (Or you can serve the rice separately and spoon the mixture over the rice.)
9. Turn crock pot off and let the mixture rest for 10 minutes before serving.[/li][/list]

TIP: If the mixture is too thick, you can add a little more milk or water, as desired. If you do add the extra liquid, make sure you add it before you add the rice. Be sure to stir until smooth, and then add the rice.

*This can be a low fat dish if you use: 98% fat free cream of chicken soup, low fat sour cream, fat free cream cheese, fat free milk, and brown rice. It will taste just as scrumptious!

My favorite is so easy.  Take 1 lb stew meat and brown it.  Put it in the crock pot with 2 cut up carrots, 2 cut up celery, and 1-2 potatoes.  Add 1 quart stewed tomatoes (actually, I can my own and put zuccini, onion, garlic and green pepper in with the tomatoes and use that for stew).  Then, add one packet flavorite stew seasoning.  Put on low all day and enjoy.

I've also put chicken breast (frozen) in the crock pot with terriyaki sauce for 4-5 hours and serve it over white rice.  very easy and something different.  Don't cook too long though or the chicken is dry.

Another great recipe is to take carne asada meat, add a jar of salsa and cook all day. It flakes really nice and is great served with spanish rice & tortillas.

O.K. Only listing the 2 best ones I have

Creamy Chicken
6-8 boneless chicken breats
1 can cream of chicken
1 cup chicken broth
1 tsp Mrs dash herb and garlic
1/2 cup flour
1 16 oz tub sour cream

Mix chicken, broth, cream of chicken, mrs dash in crock por - cook high 4-5hrs low6-8.  1/2 hr before serving mix flour into sour cream - this keeps it from clumping in your sauce. Add it to he cork pot and stir well - you can break up the chicken at this point because it will be falling apart or leave it whole.  Broken up it makes really easy chicken like haystacks.  You can change the seasoning or add green chilis - whatever your family likes.  Serve over rice, pasta whatever you like.


French Dip Subs

1 pork roast - sized to your family
1 dry seasoning packet Au Ju
1 dry seasoning italian dressing
2 cubes beef bouillion
2-3 cups water - your preference

Place pork in crock pot.  Heat at least 1 cup water until hot, and then add the beef bouillion cubes - stir until dissolved.  Then add dry seasoning packets and the rest of the water to the bouillion mix.  Cook roast according to crock pot directions on pound weight.  When done the suace in crock pot is your au ju dipping sauce.  You can use a beef roast - I just find that they don't shred as well.  To make this extra yummy broil up some bread with butter garlic and mozzarella ontop before adding the meat - this works really well with the rolls you can get at smiths that are 4 for $1 and super easy dinner.  Enjoy Smiley
