Title: What do you eat in the summer???
Post by: stea on July 02, 2008, 04:37:58 PM
It may just be me, or the fact that I am VERY pregnant, but I have no desire to cook anything this summer.  I just can't seem to get cool enough (60 degrees would be perfect right about now), and have no desire to have the oven on heating up the house.  I have even given up my brownies to avoid the oven!!!  And that is really saying a lot.  What kinds of things do you fix your family during the summer that won't heat up the house?  We have about been living on PB&J and cold cereal.  The kids aren't complaining a bit, but it is getting a little tiring dear old mom.  HELP!!!

My two favorite "tools" in the summer are the BBQ grill and the crock-pot.  Just about anything can be cooked with either method.  I'm also a big fan of salads (taco salad being my favorite).

I find that we are eating a lot of sandwiches, in all their many forms. Yesterday I threw frozen meatballs in the crock pot with a jar of Ragu/Prego and we had meatball subs with chips and salad. If we BBQ one night, I do extra meat and we have steak and provolone subs, or grilled chicken subs the next night. Or, I use any leftover meat and make quesadillas with chips and salsa. One of our other favorite easy nights is breakfast: pancakes, waffles, or french toast. They are yummy with all of the fresh fruit in the summer.
