Has anyone ever tried freezing potatoes?  I got a ton from a friend of mine and will never get through all of them fast enough.    If you can buy them from the store frozen (all varities), then there's got to be a way to do it at home.  Ideas???

I have never frozen potatoes before, but growing up we always grew them in the garden and then kept them in the garage durring the winter to keep them cooler and they always stayed good.

You can make them into hashbrowns easily enough. Here is what you do, first peel your potatoes, shred them w/ your food processor, put them in cold water while you shred the entire batch, blanch for 10 minutes in boiling water, place immediately in ice water, drain well in a colander and then place on cookie sheets lined with towels to dry them, when they are sufficiently dry place in a zip lock bag and freeze. I do them in 2C serving size....that seems to be just right for us. You have to remember when you go to use them they will take a little longer to cook 'cause you only partially cooked them before you froze them. I use them in 'funeral potatoes' just for bkfst as hashbrowns and in any soup or in a pinch, I've been known to make them into mashed potatoes. Hope that helps. Yes, I do know I can buy them for cheap, but I hate to see anything go to waste, and now you all know how to do it.

don't freeze raw potatoes.  It just doesn't work.  They never cook right and are slimy and really disgusting.  You need to cook or blanch them before freezing.  Think about doing a casserole or soup or something and freezing the whole thing.  That usually works for me quite well.  HTH
