When I have bananas that are over ripe and we won't eat them any more, I put them in the freezer to use in smoothies (sliced on a cookie sheet and then bagged when frozen so they don't stick together) or for banana bread (whole).  I have a TON in my freezer and need more ideas - we are about banana breaded out!  Didn't think that one was possible.  What else do you use over ripe bananas for (please include recipes for me)?  Thanks!

Frosted Banana Bars

1/2 c. butter, softened
1 1/2 c. sugar
2 eggs
1 c. sour cream
1 t. vanilla
2 c. flour
1 t. baking soda
1/4 t. salt
2 med. ripe bananas, mashed (about 1 cup)

In a mixing bowl, cream butter, and sugar. Add eggs, sour cream, and vanilla. Combine flour, baking soda, and salt; gradually add to the creamed mixture. Stir in bananas.
Spread into a greased 15x10x1-in baking pan (cookie sheet). Bake at 350 for 20-25 min or until toothpick comes out clean. Cool.

Frosting
1 pkg. (8oz.) cream cheese, softened
1/2 c. butter,softened
2 t, vanilla
3 3/4 to 4 c. powdered sugar

In mixing bowl, beat cream cheese, butter and vanilla. Gradually add enough powdered sugar to achieve desired consistency. Frost bars. Store in refrigerator. This recipe
can also be made and stored in the freezer.

Banana Split Cupcakes

1 yellow cake mix, divided
1 c. water
1 c. mashed bananas
3 eggs
1 c. chopped drained maraschino cherries
1 1/2 c. mini chocolate chips, divided
1 1/2 c. vanilla frosting
1 c. marshmallow creme
1 t. shortening

Preheat oven to  350.  Line 30 muffin cups with paper muffin cup liners.  Reserve 2 T. cake mix.  Combine remaining mix, water, bananas and eggs in large bowl.  Beat on low speed until moistened, about 30 seconds.  Beat at medium for 2 min.  Combine chopped cherries and reserved cake mix in small bowl.  Stir cherry mixture and 1 c. choc. chips into batter.  Spoon batter into prepared muffin tins.  Bake 15-20 min., or until a toothpick in center comes out clean.  Cool in pans on wire racks 10 min.  Remove to wire racks, cool completely.  Combine frosting and marshmallow creme in medium bowl until well blended.  Frost cupcakes.  Combine remaining 1/2 c. choc. chips and shortening in small microwaveable bowl.  Microwave on high 30 to 45 seconds until smooth.  Drizzle over frosted cupcakes.
These are DELICIOUS! I have substituted chocolate cake mix for the yellow, strawberry icecream topping for the cherries, and whipped topping for the frosting. Very adaptable.

I just take my regular chocolate chip cookie recipe and replace the fat (oil or shortening) with the mashed up bananas. Then you have banana chocolate chip cookies and they are healthier too. We also do this with pumpkin.

You can also use applesauce.

Cake Like Banan Torte

1 1/4 c sugar
1 1/4 c flour
1 T baking powder
3 T buttern (slightly melted)
Cinnamon to taste
Bananas

Mix all ingredients, it will not be like a dough. It will be just like a powder.
Put about 1/3 of the mixture in a cake pan (I use a square pan).  Put slices of bananas on top, sprinkle more Cinnamon if you like it.  Then repeat until all the flour mixture and banana is used.  You want to end with a layer of bananas.

Mix the following and drizzle on top:
2 eggs
1/2 c milk
2 T sugar

Bake it until it is firm. I would say about 45 minutes at 350.
