Peanut Butter Kisses Cookies



1/2 c shortening (butter)
1/2 c peanut butter
1/2 c sugar
1/2 c brown sugar
1 egg
2 T milk
1 t vanilla
1 3/4 c flour
1 t baking soda
1/2 t salt
1/4 c sugar
Chocolate Kisses

Mix together shortening and peanut butter, gradually add ? c sugar and brown sugar. Mixing until light and fluffy.  Add egg, milk and vanilla mix well. Combine flour, soda and salt. Add to peanut butter mixture. Roll dough into 1 inch balls, then roll in 1/4 c sugar. Place balls 2 inches apart on a lightly greased baking sheet.
Bake at 375 for 8 minutes. Remove form oven, press a chocolate kiss into the center of each cookie. Return to oven for an additional 2 minutes or until lightly browned. Makes 4 dozen cookies.

Butter and Jam Thumbprints

1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
3/4 cup (1 1/2 sticks) unsalted butter, softened
2/3 cup sugar, plus more for rolling
1 large egg
1/2 vanilla bean, seeds scraped from pod, or 1/8 teaspoon vanilla bean paste or 1 teaspoon pure vanilla extract
1/3 cup raspberry, cherry or strawberry jam

Instructions
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.

Whisk the flour, baking powder and salt together in a bowl.

In another bowl, whip the butter and the sugar with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg and vanilla until just combined. Slowly beat in the dry ingredients in 2 additions, mixing just until incorporated.

Scoop the dough into 1-inch balls with a cookie or ice cream scoop and roll in sugar. Place about 2-inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2-inch deep. Fill each indentation with about 3/4 teaspoon jam.

Bake cookies until the edges are golden, about 15 minutes. (For even color, rotate the pans from top to bottom about halfway through baking.) Cool cookies on the baking sheets.

Sugar Cookies

2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened (do not substitute margarine)
3/4 cup sugar
1 egg
1 tablespoon milk
1/4 teaspoon vanilla
Tinted egg wash

Combine four and salt, mix well and set aside. In a large bowl, beat butter and sugar until creamy. Add egg, milk and vanilla, beat until smooth.  Gradually add flour mix.  Beat until blended.  Form dough into disks and refrigerate 1/2 hours.
Decorate with tinted egg wash, if desired. Bake 12-14 minutes or until edges are light brown.  Bake at 375 Cheesy
