We are getting close to turkey day!
Lets put here some recipes for turkey and also for what to do with turkey leftover meat

Turkey Pasta Soup
8oz mushroom, sliced
2 quarts of turkey or chicken broth
2 Medium carrots, peeled and finely chopped
2 Medium celery stalks, thinly sliced
2 Tablespoons onions, thinly sliced
1/4 pkg of angel hair pasta
1 Cup cooked turkey, finely chopped
3 Tablespoons chopped fresh parsley
To Taste freshly ground black pepper and salt
In a sauce pan saut? mushrooms, carrots, celery, and onions. Add broth and let it boil, immediately reduce heat and simmer, uncovered, 15-20 minutes or until vegetables are tender.
Add pasta and continue cooking until it is al dente, about 4 to 5 minutes.
Stir in the cooked turkey and parsley and cook 1 to 2 minutes or until thoroughly heated.

This is how I cook my Turkey:
1. Make a brine with 1 c salt, 1 c brown sugar , rosemary and 2 gallons of water.
2. Remove neck, giblets from the cavity of turkey. Rinse the turkey inside and out.
3. Soak in the brine, cover and refrigerated for 1-2 days (turning it once)
4. Remove from brine, pat dry with paper towels
5. Place breast side down in a large roasting pan.
6. Rub all sides with butter
7. Stuff the turkey
8. Roast breast side down for 1 hour
9. Remove from oven, turn turkey and baste with 1/2 c stock.
10. Continue roasting with breast side up until 165 degrees F (it will take about 15 - 20 minutes per pound) also baste often
11. Remove from oven and place on a platter. Tent with aluminum foil and let it rest for 20 minutes before carving
PS:If you have purchased a frozen turkey, you will need to allow 3-5 days for it to thaw on the refrigerator. Generally, thawing takes 24 hours for every 4-5 pounds of bird

Turkey Stock
Leftover Turkey bones
Water (enough to cover the turkey)
Onions
Celery
Carrots
In a large stock pot add all ingredients. Bring to boil and then simmer for 2-3 hours. Strain the liquid. If you want you can pull all the meat out of the bones at this time. It will be easy to pull it out.
I use this stock for soups and rice. It is very easy and delicious.
