Ramen noodles are a fantastic item to have on hand as a preparedness item.  They are lightweight and only take water to use so it is simple for the 72 hour kits.  But wait - there's more!  Ramen noodles can be used in a variety of dishes.  Add your recipes here!

Ramen Parmesan

1 jar (26 oz) marinara sauce
4 pkgs (3 oz) ramen noodles (will not use flavor packets for this recipe)
1 1/2 cups water
1 1/2 cups shredded mozzarella cheese

Preheat oven to 400.  Grease 2-qt. baking dish.  Combine ingredients (except for 1/2 cup cheese) and bake, covered for 30 minutes.  Uncover and sprinkle with remaining 1/2 cup cheese and bake for 5 more minutes.

Not really a receipe but

My MIL always would cook the noodles without the flavor packet and then throw it in when she made one of those freezer Stir-Fry Meals.  Pretty good! Made it go a little bit farther also.

Ramen Haystacks

1 cup milk chocolate or white chocolate chips
1 Tbs. oil
1 pkg (3 oz) ramen noodles (broken up - flavor packet not used for this recipe)
1/4 cup mini M&M's

In microwave safe bowl, combine chocolate chips and oil and microwave in 10-second intervals, stirring until smooth - cool slightly.  Add ramen noodles and M&M's.  Drop onto wax paper.  Chill.

Another idea:

For an instant zesty party dip, simply stir one ramen noodle flavor packet into 1 cup sour cream!

Italian Noodle Salad

2 pkgs (3 oz) ramen noodles (broken up - flavor packets not used in this recipe)
1 cup halved cherry tomatoes (or use whole grape tomatoes)
1 cucumber (seeded and sliced)
2/3 cup bottled Italian salad dressing (anyone have free Ken's salad dressing on their shelf?)
1/2 cup water

Mix all ingredients and let stand 15 mintues.  Toss with 4 cups salad greens.

Ramen Party Mix

2 pkgs (3 oz) ramen noodles (broken up - flavor packets not used for this recipe)
1 cup mixed nuts
1 cup mixed golden raisins
1 cup dried cherries (craisins may work)
1 Tbs. dry southwest seasoning

Preheat oven to 350.  Combine ingredients.  Coat mixture with cooking spray and spread on jellyroll pan.  Bake until lightly toasted, about 10 minutes.

(sorry for the poor quality)
Chicken Lo-Mein

1 Tbs. cooking oil
2 Tbs. minced fresh ginger
1 clove minced garlic
1 lb frozen veggies
2 cups water
1 Tbs. lite soy sauce
2 pkgs (3 oz) ramen noodles - use 1 flavor packet only (keep other packet for another recipe)
2 cups cooked chicken
2 sliced scallions

Heat oil over medium-high heat and add ginger and garlic.  Cook for 2 minutes.  Add veggies, water, ramen noodles and soy sauce.  Cover and cook until liquid is almost absorbed, about 5 minutes.  Add chicken and scallions and heat through.

***** UPDATE 10/4/06 ***** My family thought this was the best meal I ever made (go figure!)  I tripled the recipe and it was less than $3.00 to make it including meat and we had leftovers for lunch the next day - that's a family of 6!

Ok - seriously - who knew you could make so many things with ramen noodles!  Make sure you get a case or two from Smiths this week.  They end up being $0.08 a pk!

Hey Lisa!

Thanks for the ramen recipes!!  I'm being lazy tonight and wanted something more than just ramen, but don't want to spend the night in the kitchen.  I'm going to try the Ramen Parmesan to go with our meal!!!

Here is one I like that I got from a friend in College.

Boil Ramen Noodles without the season packet. 
Drain Water off.
Add season packet to taste.
Mix with one egg,
Fry like a pancake.

I like it either plain or with a little mayo on top. 
Gives Ramen noodles a new twist.

I was being lazy last night for dinner and because of this thread I was thinking about Ramen noodles.  I got online  to look for a recipe and found this really easy variation of Chicken Lo Mein.  It got a thumbs up rating from my whole family.

Chicken Lo Mein

1 package chicken ramen noodles
2 cups of water (to cook the noodles in)
1 lb. Chicken breast strips
1/2 cup onions, sliced
1/2 cup green peppers, chopped
1/4 cup carrots, chopped
1 Tbsp oil
1 Tbsp soy sauce

Directions:

In a skillet mix oil, soy sauce and 1/2 seasoning packet.  Add Chicken and brown.  Cook noodles according to package directions and drain.  Add veggies to chicken and cook until tender.  Add noodles and cook on medium for five minutes, stirring constantly.

Here's one my SIL gave me that's really good.

Easy Asian Beef and Noodles

8 oz steak cut into thin strips
1 cup sliced green onions
2 cups shredded cabbage ( can use carrot coleslaw
     from store, very good)
2 pkgs. beef Top Ramen Noodles
1 1/2 cups water
1 T. soy sauce

Stir fry beef and onions. Add cabbage and cook . In pan cook Top Ramen noodles ( break noodles in half ) with it's seasoning in the water until most of the moisture is absorbed. Add to stir fry and add soy sauce.

Enjoy!

Ramen Noodle Soup

3 1/2 cups vegetable broth
1 (3.5 ounce) package ramen noodles with dried vegetables
2 teaspoons soy sauce
1/2 teaspoon chili oil
1/2 teaspoon minced fresh ginger root
2 green onions, sliced

DIRECTIONS:
In a medium saucepan combine broth and noodles. Cover and bring to a boil over high heat; stir to break up noodles. Reduce heat to medium and add soy sauce, chili oil and ginger. Simmer, uncovered, for 10 minutes. Stir in sesame oil and garnish with green onions.
