Chinese Chicken Salad
(there are several varieties of this salad)
2 boneless chicken breast halves, cooked and diced
2 ounces almonds
2 green onions, chopped
1 tablespoon white sugar
2 tablespoons sesame seeds
1 (3 ounce) package ramen noodles, crushed
1/2 medium head cabbage, shredded
1/2 cup vegetable oil
salt and pepper to taste
3 tablespoons distilled white vinegar
DIRECTIONS:
Combine chicken, nuts, onion, sugar, sesame seeds, noodles and their flavor packet and cabbage in large bowl. In small bowl combine oil, salt, pepper and vinegar. Pour oil mixture over noodle mixture. Let stand overnight in refrigerator and serve.

Ramen Coleslaw
2 tablespoons vegetable oil
3 tablespoons white wine vinegar
2 tablespoons white sugar
1 (3 ounce) package chicken flavored ramen noodles, crushed, seasoning packet reserved
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons sesame seeds
1/4 cup sliced almonds
1/2 medium head cabbage, shredded
5 green onions, chopped

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, whisk together the oil, vinegar, sugar, ramen noodle spice mix, salt and pepper to create a dressing.
Place sesame seeds and almonds in a single layer on a medium baking sheet. Bake in the preheated oven 10 minutes, or until lightly brown.
In a large salad bowl, combine the cabbage, green onions and crushed ramen noodles. Pour dressing over the cabbage, and toss to coat evenly. Top with toasted sesame seeds and almonds.

Broccoli & Ramen Noodle Salad
1 (16 ounce) package broccoli coleslaw mix
2 (3 ounce) packages chicken flavored ramen noodles
1 bunch green onions, chopped
1 cup unsalted peanuts
1 cup sunflower seeds
1/2 cup white sugar
1/4 cup vegetable oil
1/3 cup cider vinegar
--------------------------------------------------------------------------------
DIRECTIONS:
In a large salad bowl, combine the slaw, broken noodles and green onions.
Whisk together the sugar, oil, vinegar and ramen seasoning packets. Pour over salad and toss to evenly coat. Refrigerate until chilled; top with peanuts and sunflower seeds before serving.

Turkey Sausage Noodles
2 tablespoons olive oil
1/2 pound turkey sausage, cut into pieces
1 large onion, chopped
3 (3 ounce) packages chicken flavored ramen noodles
3 tablespoons all-purpose flour
2 cups water
1 cup frozen green peas
1/4 cup sour cream
--------------------------------------------------------------------------------
DIRECTIONS:
In a large skillet, warm oil over medium heat and saute sausage and onion for 10 minutes. Meanwhile, bring a large pot of water to a boil.
In a small bowl, whisk together 2 seasoning packets from ramen noodles, flour and water until smooth; add this sauce and peas to skillet.
Bring mixture to a boil, cover and cook for 5 minutes or until heated through.
Add noodles to large pot of boiling water and cook for 3 minutes; drain.
Remove sausage mixture from heat and stir in sour cream; do not boil. Mix in noodles and serve.

Salmon Ramen with Fresh Vegetables
from Shirley Smith
North Vancouver, BC, Canada
Open 2 packages of Oriental Flavor Top Ramen and remove flavor packets. Heat butter in skillet and add the chopped onion. Saut? onion 2 minutes. Add milk, cream cheese and 1 flavor packet. Cook and stir until mixture is smooth.
DO NOT BOIL. Add carrots, zucchini and salmon and simmer for 5 minutes. At the same time, cook the noodles with the seasoning from the remaining flavor packet for 3 minutes. Drain liquid. Add the ramen noodles to the salmon and vegetable mixture. Toss gently and serve immediately. Now that's a winning taste!
Ingredients:
2 packages Oriental Flavor Top Ramen
1 Tbsp. butter
1 onion, finely chopped
1-1/2 cups milk
4 oz. cream cheese, cubed
1 cup carrots, julienned
1 cup zucchini, julienned
2 cans (6.5 oz each) salmon, drained and broken into chunks
Serves 4

This sounds good except for the Salmon - LOL - I am not a seafood person so I would used canned chicken or pork instead - sounds yummy!

If you ever find yourself with heaps of Ramon Noodles, here are a couple recipes to use up those noodles.
Chick Milano
yield 4
1 Tbs Olive Oil
1 Lb Chicken Breast chopped
2 tsp minced garlic
1 cup sun dried tomatoes
1 cup chicken broth
2 Tbs fresh basil
1/8 tsp pepper
2 pkgs Chicken or Mushroom Ramon Noodles
Heat oil in skillet, add chicken and garlic, cook until chicken is done
Add tomatoes, broth, basil and pepper, simmer low for about 5 minutes.
Cook Ramon Noodles accordingly, drain.
Add ONLY 1 seasoning packet to the above mixture.
Serve chicken mixture over noodles.
Mexican Casserole
Yield 4
2 pkgs chicken or mushroom Ramon Noodles
1 cup shredded monteray jack cheese
1/2 cup diced green chilies
1/4 cup sliced black olives
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup crushed corn chips
Preheat over to 400 degrees
Get an 8" square pan
Cook Ramon Noodles accordingly, rinse and drain
Combine noodles with seasoning packets
Add monteray jack, chilies and olives.
Stir in Sour Cream
Put all in baking dish - sprinkle with cheddar
Top with chips and back for about 20 minutes.
* Also adding chicken to this recipe is good.

1 14 1/2 oz. can Cajun-style or Mexican style stewed tomatoes
3 cups water
1 3-oz. pkg. chicken-flavored
ramen noodles
4 oz. fully cooked smoked sausage, sliced very thinly
1/2 medium green sweet pepper, cut into bite size strips
1/2 cup shredded Monterey Jack Cheese
Cut up any large tomato pieces. Combine stewed tomatoes, water, seasoning packet, sausage, and green pepper. Bring to a boil over high heat. Break ramen noodles into quarters and add to saucepan. Return to boiling; cook 2 minutes. Top each serving with cheese. Serve with warm flour tortillas and a green salad.
