This is one of my favorites...It is almost like a sweet and sour chicken, very easy to make.  I like to use the whole berry cranberry because it also makes the dish look very cute! Wink

Russian Dressing Chicken
6 to 8 boneless chicken breasts
1 (8oz) bottle Russian dressing
1 (16 oz) can jellied or whole berry cranberry sauce (or you can use apricot jam)
1 (1.2 oz) pkg dry onion soup mix

Preheat oven to 350. Mix Russian dressing, cranberry sauce and dry onion soup mix together. Spray a 9x13 inch baking dish with nonstick vegetable spray. Place chicken in pan and pour sauce over chicken. Bake, uncovered for 1 hour. Serve over rice. I also like to do steamed broccoli on the side Cheesy

Speaking of chicken.  Anyone know of any good deals on chicken breasts right now?  I usually buy the 40 lb. box that associated food stores sales every now and again for like $1.19/lb, but I haven't seen it for awhile.  Has anyone?  TIA

This recipe is from Kraft Foods, and we love it!
1 pkg. (16 oz.) wide egg noodles
3/4 cup  KRAFT Light Zesty Italian Dressing
1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
2 cups  cherry tomatoes (about 1 pt.), halved 1 pkg.
(6 oz.) fresh baby spinach leaves
(4 cups) 1 cup  KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
8 slices OSCAR MAYER Bacon, crisply cooked, drained and crumbled
COOK noodles as directed on package.

MEANWHILE, heat dressing in large skillet on medium heat. Add chicken; cook and stir 5 to 7 min. or until cooked through. Add tomatoes; cook 1 min., stirring occasionally.

DRAIN noodles, reserving 1/2 cup of the cooking water. Add noodles and the reserved cooking water to chicken mixture in skillet; stir. Remove from heat. Add spinach, 1/2 cup of the cheese and the bacon; mix lightly. Sprinkle with remaining 1/2 cup cheese.

I've been thinking the same thing about needing chicken.  I ran out of my good deals in my freezer and had to look around today.  The best I could find was at Sunflower market for $1.57/lb in the family pack.  I just got back from buying some in fact.  I will really stock up next time it goes lower.  If anyone has found any better deals please post!

I just bought some at Albertsons for 0.99/lb, but it is not boneless or skinless. I just needed some. I will take out the skin and bone tonight and weight it to see if it was a good deal or not! Cheesy

I was actually able to talk the meat dept guy at Winegar's in Bountiful, into letting me buy a box of chicken from him.  He gave it to me for $1.49/lb for a 40 lb box.  I know it's been cheaper, but this was still good I thought.  He also said if I ever needed meat in bulk again, like ground beef, etc, to contact him for a good deal.  I was very pleased.  So if anyone is in Bountiful, check out the meat dept at Winegar's  Cheesy

Sorry for the delay, I finally got my chicken clean and weighted to see how much meat was left after the bone and skin was out.  So the chicken with bone is .99/lb without all the bones and skin it ended up being about 1.80/lb. If you are eating the chicken with the bone in, good deal if not, better wait until something else comes along!

This is my kids favorite chicken recipe.  It is similar to the chicken bowl at Teryaki stiks/Hogi Yogi
And, it is supper easy and inexpensive. 

In a large saucepan add:
2 cans chicken broth or 31/2 cups water and 3 chicken bouillon cubes
1/3 cup sugar
1/3 cup soy sauce
1 tablespoon grated fresh ginger
2 tsp. minced garlic
6-8 chicken thighs boneless and skinless(can be still frozen)
Cook on medium high heat uncovered for 45 minutes(not frozen)
to 1 hour(frozen),
In a separate saucepan: Cook rice according to package directions

Remove the chicken thighs and cut up into pieces and set aside
Spoon sauce over rice(I like to skim a little of the fat off first)
and place some of the chicken on top. 

Note: I also like to saute a little onion and zucchini in a separate pan
and add the vegetables to it too(but my kids don't like the vegetables of course)
